Mmmm, Mmmm, Good...

I'm still on a soup kick. It helps to keep the weight off while i'm not putting in the usual amount of time on the bike.

Last night it was Mushroom Leek Soup time. Here is my winged recipe. If you make it, be sure to adjust the amounts/ingredients to suit your personal taste.

Let me know how it turns out. Or if you have any other soup ideas or how i can improve this one, let me know!

Mushroom Leek Soup

1 kg mushrooms - sliced
5 leeks - sliced 0.5 cm thick
1 tbs olive oil
5 potatoes - cut into small cubes
2 vegetable bouillon cubes - i used ones made with olive oil and basil
12 cups water
fresh ground pepper
pinch of nutmeg
pinch of red pepper powder (optional)
green scallion - sliced 0.5 cm thick - optional or garnish
soya light cream - optional for garnish

Saute the leeks in olive oil until soft. Add mushrooms and potatoes. Cook on low-med heat until liquid from mushrooms evaporate.
Add bouillon cubes and 1 cup water. Stir until bouillon cube dissolves. Then add the rest of the water.
Bring to boil, then lower heat to low/med and cook for another 10-12 minutes.
Add pepper and nutmeg and red pepper powder (optional.)
Puree just until chunky.
Add salt and pepper to taste.
Serve with a spoonful of soya cream, swirl into the soup using a knife. Top with scallions.
Serve with thick toasted slices of bread.

...alright, now that we're all well fed, young lady, it's time to work on your worlds cross mantra...

...what are those words or that progressive phrase that 'you' are comfortable with ?...work w/ 'em...

...i know the bangs on the noggin slowed ya down this season, but now it's time to start ramping it up, breathing deep to dispel that pre-race nervous energy before it comes up & when it's time to go to the line, do it w/ a never before seen 'peanut' focus & drive, for you & only you...

...you can also tell me to go jump in the lake, if you'd like, but i just wanna see you have a great worlds...

...arrgh, for some reason my blogger thingy won't 'take'...

Hi there Christine I am a vegan cyclist. I know vegans are likely to have a low intake of B12, vitamin D, Iodine, Selenium, Zinc and EFA's. Just wondering if you take any supplements and what foods you pay particular attention to to get the right nutrients. Thanks

Hello Anonymous:
From everything i've read, B12 is the only concern for a vegan diet. Since the agriculture industry now uses heavy duty pesticides, we no longer get our B12 from the microorganisms on our vegetables the way we used to. Here is one site of possibly hundreds on the topic:
Sorry i don't have more info to give you since i am not a certified nutritionist.
Best of luck!

Go to http://www.veganhealth.org/sh - everything you need to know about vegan nutrition - it covers all the nutrients you mentioned and more, with great detail.
